How to make chicken tikka masala

To make chicken tikka masala, you will need the following ingredients:

For the chicken tikka:

  • 500g boneless, skinless chicken breasts, cut into 2-inch pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons grated ginger
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • salt, to taste

For the masala sauce:

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (400g) diced tomatoes
  • 1 cup heavy cream
  • salt, to taste
  • Chopped fresh cilantro, for serving
  1. In a large bowl, mix together the yogurt, lemon juice, ginger, garlic, cumin, paprika, coriander, garam masala, turmeric, and salt. Add the chicken pieces and stir to coat. Cover and refrigerate for at least 1 hour or up to 8 hours.
  2. Preheat the grill to high heat. Thread the chicken onto skewers and grill for 10-12 minutes, or until cooked through.
  3. While the chicken is grilling, heat the oil in a large pan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more. Stir in the cumin, paprika, coriander, garam masala, turmeric, and cayenne (if using).
  4. Add the tomatoes and bring to a simmer. Cook for 10 minutes, or until the sauce has thickened. Stir in the cream and season with salt.
  5. Add the grilled chicken to the sauce and cook for an additional 5 minutes, or until heated through. Serve over rice or with naan bread, and garnish with chopped cilantro. Enjoy!
